Workshop with TV chef Frank Seimetz (21.09.09)

On September 3rd 2009 the managers, chefs and the CEO Hubert Pirrung himself came together for a creative workshop with TV chef Frank Seimetz. Topic of the day: expedient food in the communal feeding. The teaching shows a switch from carbohydrate food to an albumen food. This cognition should be part of the communal feeding in hospitals, homes of the aged, nursery schools and companies. To cause the change of our menus, Frank Seimetz cooked some interesting and creative receipts and the team had got a first impression of the “new kitchen”.

Another workshop is taking place in the near future to consolidate this topic.

Staff change (21.09.09)

Since september 1st 2009 Mr. Max Bilewski became part of the pirrung team at our administration located at Ormesheim. He is doing an apprenticeship for office worker. We are happy about his assistance and we wish him success and happiness with both parts of the business, the academic and the practical.

pirrung is happy to look after 350 people (patients, visitors, personnel) per hospital daily to satisfy them with healthy, good tasting meals out of the pirrung-Vitalküche.

We are very proud of having the opportunity to spoil everybody who’s having breakfast, lunch or dinner at the clinic – being patient, visitor or staff. Many thanks to our new business partner “Klinikgruppe Graf von Oeynhausen Sierstorpff”.

pirrung runs café at  Evanglisches Krankenhaus Unna

Since March 1st pirrung runs - additional to the hospitalkitchen -  the café at the Evangelische Krankenhaus Unna. After spicing up the caféteria rooms and building a new service team, lots of yummy daily meals, cakes, coffee specialties and all kind of snacks and beverages wait for staff, patients and guests of the hospital. We are very happy about our new task and will do our best to spoil our guests!

Catering of the future – “Sous vide”, new method is winning over kitchens everywhere

In the past Pirrung focused entirely on fresh food catering and was known as an advocate for tasty food prepared with fresh, high quality ingredients. For some time now we have been working with a new, innovative cooking process which caught our interest and has completely won us over.

What is “sous vide”?

Sous vide involves the vacuum sealing of a combination of raw products followed by a process of slow simmering in their own juices at 60 to 90 degrees.

As a result, the natural aromas are concentrated and enhanced. The products’ taste and nutritious qualities are markedly enhanced as all natural flavours and vitamins are retained. There is no need to add artificial flavours. A 20% reduction in the amount of salt added can be achieved. Food products remain fresh for longer.

The sous vide method is the catering of the future. The product is simply outstanding in terms of the profitability and the nutritional balance it offers.

It is suited to domestic kitchens without high-end appliances as well as industrial kitchens designed to cater to hundreds of people.

Hygiene and quality assurance concepts

The products are subject not only to HACCP, but also highest international standards.

Staff changes

We warmly welcome our new operations manager Mrs. Marion Holz and Mrs. Ina Mertens, who are in charge in Bad Klosterlausnitz and Bad Driburg. Also a big welcome to all new staff members in these hospitals. All the best and a successful start with our concept “pirrung-Vitalküche”.

Mr. Weber has left pirrung in June 09. Our good wishes follow him.


Starting May 1st, 2008, Mr Wolfgang Niesalla, currently head chef at the EKU, will take on Mr Thomas Scheider’s position as operations manager. Mr Scheider is leaving us to seek a new career direction and we wish him all the best for the future. Our congratulations go to Mr Niesalla, wishing him great success in his new appointment

We also welcome Mr Jaky Weber as a regional manager for NRW/Germany - starting May 2008 as well. We are looking forward to working together at lots of new projects. 

On January 1st, 2008 we welcomed back our former colleague Mrs Claudia Blum after a period of parental leave. She returns as project manager quality management as well as taking on a variety of other responsibilities at Pirrung. These include Frau Ursula Iriohn’s area as she is leaving us to pursue new challenges.

Evangelisches Krankenhaus Unna is a new Pirrung mensa vitae client

Since April 07 Pirrung caters for  the Evangelisches Krankenhaus in Unna.

We are very happy about that and will do our work there with lots of engagement.

Manager, Thomas Scheider and chef, Wolfgang Niesalla, plan, organise and prepare meals for 11.000 patients per year, their guests and staff in the inhouse kitchen with a team of 30 people.

Best of taste and highest quality are the demands on ourselves. With fresh ingredients, lots of regional products, variation of meals and the help of nutritionists we achieve this goal every day.

Through our cooking, which is high in nutrition and tasty, we help patients to recover quickly and guests and staff to enjoy their break while having a meal which is healthy and tasty. 

We love to cook. You can taste that.

Pirrung provides Seniors club "Fässchen" at Unna with tasty meals for seniors

Since april 2007 Pirrung mensa vitae caters for other establishments from the kitchen of the Evangelische Krankenhaus Unna with a tasty, healthy meal.

Besides Kindergarten and companies now also the "Fässchen", a seniors club managed by Markus Niebios. Thomas Scheider (right) and Wolfgang Niesalla take care of a haelthy lunch together with their kitchen team.

Re-certification according to DIN EN ISO 9001:2000 completed / audit passed

It was an intensive and productive procedure.
From June 2005 pirrung is certified. In September 2006 the re-certification was completed in Bad Laasphe.

We would like to thank again all those who supported us and assisted in the analysation, optimisation and documentation of operation processes.

The aim of this certification was - and is - to
obtain official proof from independent bodies
(in our case the SGS in Speyer, Germany),
that our services, standards and aspired quality
results are achieved through optimal workflows.

We attach particular importance to:

- effective and reliable cleaning services
- efficient logistics
- continual optimisation of staff performance
- high standards, implemented to satisfy the
- needs of clients (patients and hospital staff)
- as well as those of our personel

The conclusions gained through the certification
will be implemented in all institutions that are
supervised by us.

We are proud to have achieved the certification,
and will constantly strive to optimise operation
processes.

Another pirrung mensa vitae client - the AWO at Bad Laasphe
 

We are happy to announce, that we now attend to a new client in Bad Laasphe. The ‘Arbeiterwohlfahrt / AWO’.

Since 2000 pirrung mensa vitae is working as main caterer in the Emmaburg Clinic and provides patients, staff and guests with a well-balanced choice of meals, which meets the demands of the different groups.

Since 2004 the Schlossberg Clinic merged with the Emmaburg Clinic. They now exist under one umbrella – the HGC Clinics, which are now both provided with Pirrung meals.

From there – using the same base - we also deliver lunch to the protestant kindergarten, the AWO-kindergarten and to the Primary School in Bad Laasphe.

Our main attention is to provide good tasting, healthy meals – an important presupposition for children to be able to learn successfully and for their well-being. 

Additionally the AWO distributes - with the help of their volunteers - a pirrung cooked meal to elderly people, who are not able to care for themselves any more. Paying attention to the needs of elderly people is imperative for us. 

Basically we offer individual food programs: 

  • full diet
  • light food
  • diabetic food
  • vegetarian food
  • et cetera

Especially in case of children and elderly people the nutritional demands differ substantially. The alimentation should meet the different stages of a child’s development from infancy to puberty.

Similar to elderly people, who are not able to be very active. The portioning and the nutritional requirement differ from other people, which work physically hard and / or do a lot of sports. 

Our nutrition experts (chefs and their assistants) are passionately engaged in this theme and develop the different menus for our target groups.

  Since August 2007 we also supply students of the Städtische Grund- und Hauptschule at Bad Laasphe with delicious lunch

The Städtische Grund- und Hauptschule at Bad Laasphe offers their students a diversified lunch. Since August 2007 the lunch for the students is prepared and delivered by Holger Bornkessel and his team at Emmaburg. Besides the regular menu there are also "kid's specials", which consider the preferences of this age group and assure alternation. On offer are also vegetarian meals. The students can go back to their afternoon lesson or do their homework with new energy.

Management contract with Vinzentius Hospital, Landau

Since July 06 pirrung is been managing the cleaning services at the Vinzentius Hospital at Landau.

We are very happy about our new client and our tasks there.

An experienced Pirrung-teamleader manages the cleaning service with the existing personel.  The advanced employment of the existing employees was of utmost importance to the clinic  management - due to the fact that these people have been working in the house for a long time and are familiar with the premises. 

Beside the cleaning services Pirrung accompanies and optimises further logistic topics bit by bit.
